2 at work lunch ideas that are simple and minimal effort

When you’re on the run to and from work you can forget to eat so having some at work lunch ideas will help you better prepare. Breakfast is the most important meal of the day. But when you have to wake up early or get stuck in traffic lunch will do too. 

With this in mind here are  2 easy-to-make, at work lunch ideas that can even be eaten cold. Having a cold lunch is sometimes the only option even when you might have a microwave at work. 

Fajita wrap 

As a first recommendation, I know this doesn’t sound easy BUT don’t be fooled it’s one of the easy at work lunch ideas. You basically just stir-fry some ingredients and put them in a wrap along with a few other ingredients. You can eat it cold too, it’s just as tasty.


  • 1 or 2 Chicken breasts (*)
  • 1 Red pepper (or yellow and green if you’re in a pinch) 
  • 1 onion, red would look nice but white is ok too
  • 200 grams of Tomato juice/puree or salsa 
  • Tortilla wraps
  • Salad (your choice or variety)

Spice mix:

The perfect mix can be bought or made. If you don’t have any you can make use of other spices. 

  • Garlic cloves, or powder
  • Ground cumin 
  • Chilli powder or paprika (smoked paprika is recommended)
  • Ground coriander
  • Lemon juice (optional – not everyone likes this)

Have the onion, pepper and chicken breast chopped. 

Mix the spice with your salsa.

Start stir-frying the breast first until it’s no longer entirely raw, but don’t overdo it. 

Add some spiced salsa from your mix and add the onion and pepper. 

Make sure the spiced salsa is coating everything, and cook for about 5 minutes. 

Put the stir fry in a tortilla wrap and add the salad.


Pasta fredda or cold pasta

One of the easiest at work lunch ideas that works so great when you are in a rush. This was a default lazy idea that saved many crazy days when time was scarce. There are many permutations of ingredients you can use, this is just one example . 

This idea is one that comes with so many customisation options but we will just focus on one here. It’s also a vegetarian one, so it covers that base for people that want that option. 


  • Olives 
  • Mozzarella (or even feta cheese) 
  • Tomatoes (cherry, plum or larger tomatoes)
  • Olive oil 
  • Pepper (optional)
  • Basil (optional)

Boil the pasta, either farfalle, fusilli, or penne, but you can even use spaghetti if that’s what you have or any other type of pasta. 

Chop the mozzarella into strips and the tomatoes either in two if you have small ones or cubes for large tomatoes. 

Sprinkle olive oil, olives basil and pepper. 

Easy with not much hassle, the only cooking is boiling the pasta.
