Tiramisu is a fluffy cloud-like sweet Italian dish famous around the world, its name literally means to lift me up, with no baking needed.

Ingredients
- 300 g sponge fingers
- about 4 medium very fresh eggs
- 500 g mascarpone
- 100 g sugar
- 300 g coffee (sweetened to taste)
- cocoa powder for decoration
Instructions
Carefully separate the egg whites from the yolks, so that the egg whites must not show any trace of yolk, this is to make sure the eggs whip well. Then whip the yolks with the electric whisk, pouring only half a dose of sugar.
As soon as the mixture has become light and frothy and with the whips still working, add the mascarpone, little by little. Mix until obtaining a thick and compact cream.
Whisk the egg whites by pouring the remaining sugar a little at a time until the cream is firm. Take a spoonful of egg whites and pour it into the bowl with the yolks and sugar and mix vigorously with a spatula to incorporate. Repeat until all the egg whites are mixed in.
Once ready, distribute a generous spoonful of cream on the bottom of a baking dish and distribute it well. Then soak the sponge fingers for a few moments in the cold coffee )already sweetened to your liking) first on one side and then on the other.
Gradually spread the soaked sponge fingers on the cream, and add another layer of cream on top of the fingers.
Once all the cream is spread on the last layer, level it well and powder it with cocoa. Leave to harden in the fridge for a couple of hours and the tiramisu is ready.
Tip for tiramisu
Instead of cocoa powder, you can decorate your tiramisu with flaky dark chocolate or chocolate chips to your liking.
